Thanks Art and Apple, these look like great recipes. Art, I just have to figure how to convert grams to cups and celcius to Fahrenheit and I'll have it made. I have conversion tables somewhere, or should be able to come close with common sense. Thanks guys.

For easy guacamole I buy pico de gayo at the local Mexican restaurant and bring it home to mix with my own avocados and lemon juice.

So here it is again!

Coconut Bread With 3 Ingredients

The most simple coconut bread recipe, contains only 3 simple ingredients.
This gluten, dairy & sugar free bread can be eaten sweet or savory & has perfect amount of moisture & light crumbly texture. Best part, it takes only a couple of minutes to prepare. Enjoy!

Preheat the oven to 140°C and line a loaf tin with baking paper.

6 free range eggs
3 cups of desiccated coconut
1 tsp baking soda

optional extras:
1 tsp vanilla extract
2 Tbsp honey to add a subtle sweetness
1/2 cup fresh berries or fruit OR1/2 cup dried fruit

Add the eggs, coconut & baking soda to food processor.
Blend until combined, then pour in to the prepared loaf tin.
Bake for 45 minutes, or until a skewer comes out clean when inserted.

***Leave to cool, then simply lift out, and slice thickly.

***Will keep for 3-4 days in an airtight container.

Dairy-Free Pumpkin Muffin Recipe (Only 3 Ingredients)

These muffins are so moist & delicious!!
Even my friends who don't like pumpkin absolutely love them!
Plus, they are quick & super easy to make!
I added Dairy-Free chocolate chips and they are so good!

Ingredient List:
1. Duncan Hines Yellow Cake Mix (Check ingredients every time to ensure it’s still Dairy-Free)
2. 15 oz. Can of Pureed Pumpkin (Not pie mix)
3. EnjoyLife! Mini Chocolate Chips (1/2 Tbs per muffin, or less if you prefer)

Yields: Approximately 12 muffins at 195 calories each.

Directions: Pre-heat oven to 350

1.Pour cake mix & pumpkin puree into large mixing bowl. DON’T add anything else, because you’re NOT following the directions on the cake mix. You only need these two things- the cake mix and the puree!

2. Mix it all up. I use a spoon to mix it up. It's quick & easy. Batter will be pretty thick!

3. Put approximately 1.5-2 Tbs dollops in a lined muffin tin. (Spray cupcake liners with canola oil cooking spray prior to adding batter for easy removal from lining!)

4. Once batter is in the liners, add your EnjoyLife! mini chocolate chips!
I do 1/2 Tbs about 35 calories per muffin, but add more or less, depends on your preferences.
The chocolate chips will adhere to muffins during baking.

5. Put in oven for exactly 20 minutes (adjust to 18-24 min, depends on your oven)!
20 minutes gives me the perfect muffin every single time.

3 Ingredient Peanut Butter Cookies So easy and yummy!
Prep:10min › Cook:10min › Ready in:20min

Easy peasy peanut butter cookies! Great to make with the kids or for a little treat.
These really are just three ingredients, and they are gluten & dairy free!

Makes: 10 to 15 cookies

260g chunky peanut butter (or smooth) JIF Peanut Butter Brand
200g sugar
1 egg
1 teaspoon vanilla extract (optional)
(Think of buying the real not the artificial vanilla etract, big price difference but lasts forever!)

Method
Prep:10min › Cook:10min › Ready in:20min

1. Preheat oven to 350 F and line a baking tray with baking parchment.
2. Add all ingredients to a bowl. Mix until well combined.
3. Roll dough into 2.5cm (1 in) balls then place on your baking tray 5cm (2 in) apart.
4. Use a fork to make a crisscross pattern (#) and flatten them out a little bit.
5. Pop them in the oven for 10 to 15 minutes and you're done!

Healthy Pancakes (gluten, grain and dairy free, no added sugar) 2 ingredients

- Basis of batter is extremely simple, roughly 1 egg per 3 or 4 Tbsp of mashed banana.
But you can add a few things to it to make it more awesome.

- I really recommend adding the baking powder; it makes them fluffier,
but if you enjoy a denser pancake leave it out.

- I’ve made them with 2 Tbsp peanut flour (aka pb2) & they’re SO AMAZING,
& even more filling- even if you don’t like peanut butter, you can’t taste it much.

- Add flavor extract, spices & things like chopped nuts, chocolate chips, fruit etc…
for a personalized flavor

- Whole recipe (using a slightly heaped 1/3 cup of mashed banana)
Makes about 8-10 2“ to 2 1/2“ in diameter pancakes!

-Can use frozen bananas, let them defrost & then peel & use as per usual in recipe.

- For smoother batter, blend ingredients in food processor, blender or stick blender.

Healthy Pancakes (gluten, grain and dairy free, no added sugar) 2 ingredients

Basic Batter:
1 large banana, mashed (should be around 1/3 to 1/2 cup when mashed)
2 eggs

Instructions
1. Peel and mash the banana, stir in the egg.
2. Mix in any non-chunky add ins you want (e.g. nut flours or butters, baking powder...).
3. Heat a non stick skillet & lightly spray with oil. Turn the heat down to medium-low.

4.Pour a circle of batter into the pan (I used about 1 or 2 Tbsp of batter per pancake).

5. Cook until golden brown on the underside (around 1 minute), sprinkle on any chunky ingredients (e.g. chocolate chips, fruit, nuts, if using),
Then use a metal spatula to flip and cook until golden brown on the other side
(30 seconds to 1 minute).

Optional add ins:
- 1/8 tsp baking powder (if you like them fluffier)
- 2 Tbsp nut butter OR pb2/peanut flour OR almond flour OR desiccated coconut
(I’ve made them with 2 Tbsp peanut flour (aka pb2) and they’re SO AMAZING,

- 1/4 tsp ground cinnamon

Zesty Turkey Meatballs
Preheat oven to 350 degrees
1 pkg. of taco seasoning and 1 egg to turkey to 16 ounces of Jennie O 99% Fat Free Ground Turkey Breast
Form Meatballs...Bake @ 350...until done in center
Top with salsa

2 cup Frozen Thai Veggies + 100g Jane's Meal Makers + 1/4 cup Blue Dragon Chili Coconut Sauce = 10 minute Chicken Thai Curry (warning: high in sodium!). I always have these in my freezer/pantry, just in case I have to put off groceries for an extra day. Could add rice if you like.

One of my favorites right now:
Progresso Light Vegetable Soup + 2 tbsp garlic hummus stirred in
The hummus makes the soup creamy and adds so much flavor as vegetable soups can be bland. Feels like you're cheating big time but it's very low calorie and super yummy! emoticon

Green beans and new potatoes are also high on my list :)

Angel hair pasta with some sun dried cut up tomatoes. Very delicious. I add feta cheese but you don't need to.
Beans and brown rice (lots of recipes on internet)
White beans and spinach or swiss chard
potatoes and sour kraut, mixed
potatoes and green beans, mixed.
