The most inexpensive is a hearty vegetable stew, using whatever is available at the store or farmer's market. Thicken it with some mashed potato instead of flour. For the meat lover, sear some beef if you used root vegetables, chicken if you used more delicate vegetables. For the vegetarian lover, sear some tofu in garlic olive oil. Layer the stew in bowls with meat for the meat lover, tofu for the vegetarian, and serve with slices of fresh crusty bread. Condiments on the side if they like to play with their food. You can make a side salad and dessert for everyone to share.
Stew is easy if you buy the precut vegetables, less expensive if you do the chopping yourself.
