I have a wonderful recipe for Mediterranian green lentils with cukes, mint and quinoa or couscous - actually I have lots of excellent vegetarian recipes, but I need to know what you like - do you eat pulses? tofu? Do you like sweet potatoes?, black beans? beets? What are your dietary restrictions? What foods (veg, beans, etc) do you not care for? Do you like curries? spicy foods?
I am not diabetic so will need some help. It sounds like you are new to vegetarian eating. Are you new to being diabetic as well?
