I am also not a fan of fish, especially ones that are very fish tasting. I agree with the other posts, tilapia is a good fish that is not too 'fishy'. I have two that I use regularly, one for shrimp and one for talapia.

Talapia

2 Talapia fillets, thawed and patted dry
1 Tbs Olive oil
Juice of 1/2 lemon
Dried Thyme

Heat oil in skillet on medium high heat. Sprinkle some thyme in the oil. Add the fillets and cook for 3 minutes, do not turn or disturb. Sprinkle more thyme on fillets and squeeze lemon juice over fish. Turn quickly and cover skillet. Turn off heat and leave pan sit on burner.
Fish will finish cooking, but won't dry out while you toss together a quick salad.

Ready in a jiff and sooo good.


Shrimp
2 lbs cleaned, raw Shrimp
2 Tbs chopped fresh Rosemary
1 Tbs Olive oil
Juice of 1 Lime
1 tsp garlic powder
1 tsp hot chili powder
Handful of cilantro, chopped

Put all ingredients in bowl and gently turn to coat. Let sit for no more than 20 minutes.
Then either skewer shrimp to grill, use two skewers to prevent flip, or heat large skillet on high. Grill shrimp for 1.5 minutes on each side or pour contents of bowl into hot skillet and stir fry for 3 minutes.

I serve this with brown rice and a salad. In fact, had this with two of my kids last night.

Creole Tilapia

Ingredients
Serves: 2 Prep: 5min Cook: 10min Total: 15min

1/2 cup quick-cooking brown rice
1 sliced onion
2 ribs celery, sliced
2 large carrots, sliced
2 tilapia fillets (5 to 6 ounces each)
1 cup canned diced tomatoes
2 tablespoons chopped fresh cilantro, parsley, or basil
seasoning salt
ground black pepper

Directions
Prepare the rice according to package directions.
Meanwhile, coat a large skillet with cooking spray. Over medium-high heat, cook the onion, celery, and carrot for 5 minutes, or until tender. Add the tilapia and cook for 3 minutes. Carefully turn the fish and add the tomatoes and herbs. Season with salt and pepper to taste. Simmer for 2 minutes, or until the fish flakes easily. Serve over the rice.

Baked Fish with Parmesan-Sour Cream Sauce

Flounder, orange roughy or any other white fish works.

1 1/2 pounds Tilapia
1 (8-ounce) container sour cream
1/4 cup shredded Parmesan cheese
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons Italian-seasoned breadcrumbs
2 tablespoons butter or margarine, melted

Place fillets in a single layer in a lightly greased 13- x 9-inch pan.
Stir together sour cream and next 4 ingredients; spread mixture evenly over fillets. Sprinkle with breadcrumbs, and drizzle with butter.

Bake at 350 for 20 to 25 minutes or until fish flakes with a fork.

Yield: 4 to 6 servings

Pan Seared Orange Roughy

3 Tbsp yellow cornmeal
salt & pepper -- to taste
8 ounces orange roughy fillets -- (4 oz fillets)
2 tsp vegetable oil

In a zip loc bag, mix the cornmeal, salt and pepper. Add the fish fillets and shake.

Heat 1 teaspoon of oil in a nonstick skillet over med heat. Add the breaded fillets and cook until lightly browned. Add the other tsp of oil as you turn the fillet. Cook until lightly brown of second side.

Serves: 2

Per Serving: 167 Calories; 6g Fat; 18g Protein; 10g Carbohydrate; 1g Fiber.

Honey Orange Glazed Florida Grouper

Ingredients
1 tablespoon honey
1 tablespoon orange marmalade
1 tablespoon orange juice
3/4 teaspoon Dijon mustard
1/2 teaspoon light soy sauce
1/8 teaspoon ground white pepper
3/4 pound grouper fillets

Directions
1. Combine all ingredients except grouper, mixing well.
2. Place fillets on a prepared pan and place on grill. Brush fillets with honey glaze to cover. Grill for 4 to 5 minutes until browned. Turn fillets, brush with honey glaze and grilll additional 5 minutes or until fish flakes easily.

PER SERVING (1/2 of recipe, 1 fillet with seasoned beans): 270 calories, 2g fat, 592mg sodium, 32.5g carbs, 9.5g fiber, 8g sugars, 31g protein.

Ingredients:
1 cup canned red kidney beans, drained and rinsed
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup tomato paste
1/2 tsp. Cajun seasoning, divided
1/2 tsp. chopped garlic
1/8 tsp. ground thyme
1/8 tsp. salt
1/8 tsp. black pepper
Two 4-oz. raw flounder fillets
Optional: hot sauce

Directions:
Preheat oven to 350 degrees. Place beans, bell pepper, onion, and celery in a bowl. Mix well and set aside.

In a small bowl, combine tomato paste with 1/4 tsp. Cajun seasoning. Add garlic, thyme, salt, and black pepper, and mix thoroughly. Transfer seasoned tomato paste to the bean-veggie mixture, and stir to coat. Set aside.

Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray. Scoop seasoned bean-veggie mixture into the center of the foil, and spread it out a bit. Evenly sprinkle remaining 1/4 tsp. Cajun seasoning on both sides of each fillet, and lay the fillets side by side on top of the bean-veggie mixture.

Place another large piece of foil over the whole thing. Fold together and seal all four edges of the two foil pieces, forming a well-sealed packet.

Bake in the oven for 20 minutes, or until the fillets are cooked through and the veggies are tender. Cut packet to release steam before opening it entirely. (Careful -- steam will be hot.)

Serve each fillet with half of the bean-veggie mixture. If you like, add a little hot sauce.

Easy Shrimp Scampi
12 Large cooked Shrimp only 90 calories ...Sautee garlic cloves and butter, put cooked shrimp in sauce and toss for a minute, add some parm, toss until shrimp are hot maybe another minute. Serve with Brussels spouts, green beans or asparagus and 1/2 cup of WILD RICE.

SARDINES ARE LOADED WITH PROTEIN. COQ10 is one of the good features sardines have and they are heart healthy. Plus they have omega-3 fatty acids which have been found to lower triglycerides and cholesterol levels and are a rich source of bone-building vitamin D,
Sprinkle sardines with lemon juice and extra virgin olive oil.
Combine sardines with chopped onion, olives, or fennel.
Top sardines with chopped tomatoes and basil, oregano, or rosemary.
Balsamic vinegar gives sardines a nice zing.
Make a sauce with extra virgin olive oil, lemon juice, pressed garlic, Dijon mustard, and salt and pepper. Serve over sardines.

Mash the sardines...Mix with chopped onion and a little dry mustard or create a sardine salad, on pasta, in a sandwich spread, or eating them straight out of the can. About 150 calories for the can.


Take any white fish, rub fish with Olive oil, sprinkle with rosemary and black ground pepper and fresh lemon. Place in a tinfoil packet and bake 30 minutes or until fish flakes. Easy and easy clean up too! You might wan to try Talapia as it is a mild fish.

Anchoviues are healthful too try on salads....tuna stuffed tomato, tuna salad, tuna on rye.....

I'm trying to incorporate more fish into my diet but I'm not crazy about salmon as it tastes TOO "fishy" to me. I'm also not someone who spends a lot of time in the kitchen.

Does anyone have any quick and easy fish recipes to share?
