I omitted the honey and used more vinegar (more of a 1:1 ratio with oil) and it was plenty sweet for me. If you have oranges on hand, using the juice for part of the vinegar is a great option as well.
Smoky Orange Vinaigrette
1/4 cup(s) rice vinegar
2 1/2 tablespoon(s) orange marmalade
1 tablespoon(s) water
1 teaspoon(s) honey
1/2 teaspoon(s) smoked paprika
1/2 small shallot, minced
1/4 cup(s) extra-virgin olive oil
1 tablespoon(s) minced parsley
Kosher salt and freshly ground pepper
1. In a bowl, whisk the vinegar, marmalade, water, honey, paprika and shallot. Slowly whisk in the oil. Stir in the parsley and season with salt and pepper.
