There are dry rub recipes that can give meat a great flavor, and you can tailor them to meet your dietary needs.

This is one I like- Obviously, omit the garlic powder.

1/4 cup brown sugar, packed
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon cumin
1/2 teaspoon cayenne pepper (can use more)
1 tablespoon garlic powder
3 teaspoons mustard powder
2 teaspoons salt
2 teaspoons black pepper

Also, vinegar based sauces are great and rarely use onion, garlic, or any of those other ingredients. This is my current favorite:

Makes about 2 1/4 cups

Ingredients:

1 1/2 cups apple cider vinegar
1/2 cup ketchup
2 tablespoons prepared mustard
2 tablespoons brown sugar
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon cayenne

Preparation:

Combine all ingredients in a sauce pan and simmer while stirring until the sugar dissolves. Remove from heat and serve warm. Great for pulled pork, but also works for chicken, or even brisket. You can mix it with premade mayo to give it a thicker consistence and a unique flavor.

As someone who could DIE from eating anything in the Onion Family I hate to inform you but both of the recipes listed have onion in it. Garlic (given), Ketchup (even lite has onion powder), Steak Sauce is iffy you really have to read the label (watch for Spices! the catchall for Onion and Garlic powder), and I have caught Horseradish with Garlic/Onion powder in it if I go cheap. Have you tried Food.com? There is a No Onion No Garlic Cookbook on there with 204 recipes. There are a small few BBQ sauces without any Onion, not sure about the wheat or barley though as I don't have to watch those.

BBQ Chicken, made with 1/4 cup steak sauce, 1 Tablespoon of sugar free Maple Syrup ,1 Tsp dry mustrad, 1 clove of fresh garlic, 1 Tbsp. of Horseradish, 4 lbs of chicken parts. Put chicken parts into the above ingedients after mixed and marinate at least 3 hours .. broil as far away from heat source as possible. This Marinade is good on Pork or lamb also.

Mix unsweetened ketchup or tomato paste with some seasonings: a dash of lemon juice and a smaller dash of cider vinegar, a dash of wheat-free soy sauce or steak sauce, a small amount of baby-food style apple sauce (for sweetness and thickness), and a couple of drops of Tabasco. Add a drop or two of mustard and stir. This is all "to-taste", so it isn't really a recipe. But I've used it, and it works.

Hi - my son is on a special diet need a BBQ sauce recipe with no onion garlic wheat or barley . To complicate things further he does not like oregano or rosemary. can anyone help me? Light 512
