Timing of eating really doesn't matter. Also, how are you defining carbs? Technically, every veggie and fruit have carbs. The only purely carb free foods are pure proteins (meats mostly- beans contain carbs).
I'd say focus on the RIGHT carbs- whole grains (as in brown and ones you cook yourself- brown rice, quinoa, buckwheat), sweet potatoes, most veggies. If you're cutting things out, cut out anything really processed, white or refined, veggies in sauces and fruits in syrups.
