Take 1 pound boneless skinless chicken and cut into bite size pieces. Saute in a bit of olive oil and then add a can of Rotel diced tomatoes with green chiles UNDRAINED.

delish if you like spicy food

You may want to check out some of the Atkins recipes that are on U Tube. I've made several of them and they are awesome. There's one guy on there that goes by bowulf. He demonstrates from his kitchen different recipes. Very simple and so worth it. I'm on Atkins and I have lost 3 pounds in the past 7 days. He does a whole section on Induction Phase recipes.

I am on my way to better health and fitness.

Timing of eating really doesn't matter. Also, how are you defining carbs? Technically, every veggie and fruit have carbs. The only purely carb free foods are pure proteins (meats mostly- beans contain carbs).

I'd say focus on the RIGHT carbs- whole grains (as in brown and ones you cook yourself- brown rice, quinoa, buckwheat), sweet potatoes, most veggies. If you're cutting things out, cut out anything really processed, white or refined, veggies in sauces and fruits in syrups.

Ultimate goal: 180-170

Currently working and going to grad school. Given my stress level and time constraints (and with my doctor's blessing), I'm not trying to lose a lot of weight, just be healthy and not gain. Once I get my degree I'll pick things up again.

I am vegetarian and I love to use zucchini when I cook! I will use it as a substitute for noodles all the time. You can slice it in flat, thin pieces and use it for lasagna, in strips like spaghetti noodles, or just cook it in normal slices. It's great with red sauce or cheese sauce! Technically this includes carbs but they are healthy carbs.

Veggies even have carbs...you dont need to eliminate carbs just choose the right ones for better health.

Lean Pot Roast made with celery, whole mushrooms, Green Beans, Onion ( no Potatoes )

Stuffed Green Pepper Made with Ground Sirlion or ground turkey, Chopped Fresh Tomatoes, Garlic, 1/2 Onion Chopped, 1 Small Can of Tomato Sauce 2 Sugars 4 carbs....no rice

1 Pork Chop, 1/4 Head of Cabbage with butter and caraway seeds, unlimited green beans
Shrimp Scampi
20 cooked Shrimp each...Sautee garlic cloves and butter, put cooked shrimp in sauce and toss for a minute, add some parm, toss until shrimp are hot maybe another minute. Serve with Asparagus.

1/2 Avocado with stuffed crabmeat 4 ounces crabmeat with mayo on a bed of lettuce about 6 carbs

SESAME CHICKEN
2 tablespoons soy sauce
1/4 cup sesame seeds right from the jar
Sprinkle of salt teaspoon salt
Dash of pepper
4 boneless, skinless chicken breasts or thighs
1 tablespoon sesame oil

Heat oven to 400. On wax paper, mix the seeds, salt and pepper. Put the soy sauce in a small bowl. Dip each piece of chicken in the soy sauce to coat, then dredge in the seeds. Arrange in a baking pan and drizzle with the seasame oil.. Bake about 40 minutes until the chicken is done. Baste with the drippings once during cooking time. Carbs... 1gram per serving

Make a stir fry with beef , pork or chicken . Add whatever veggies you like. Buy Polaner sugar free apricot preserves and mix in a few tablespoons with you stir fry. Yummm and zero carbs.

The time of day you eat carbs (or calories) makes no difference on weight loss. I've lost a lot of weight and I have carbs for dinner, after 8pm, all the time.

Working on maintaining at 140!

I have recently read that if you cut out carbs between 2 - 3pm it will help you lose weight so I thought I might give it a try. Does anyone have any ideas on dinners to make at home that doesn't have bread, pasta, rice, potatoes ect in them? Also my husband and I hate tofu. Any ideas would be greatly appreciated!!
