I make food for lunch on the weekend when I have time. Beans, rice, corn, salsa; or lentils and rice. Then I warm up some each day for lunch and have an orange. On weekends when I don't have time I take romain lettuce hearts to work and top my salad with tuna, or chickpeas, or cheese. Sometimes I stuff the salad into a pita pocket.

tuna or egg salad and a muffin (I bake extra, freeze and then let thaw while at work. I can always microwave or toast...) I always throw in carrots, cucumbers, bell pepper for munching on and not blowing the calorie limit!

I like your idea's. I also use Salsa with celery and bell peppers (orange bell peppers is my favorite).

That lunch crock sounds totally awesome! :D

I pack a lot of fresh fruits and veggies. I have a cooler lunchbox so they don't get all weird or soggy. I'm a snacker. I don't have to deal with people for my job, so I snack on veggies and stuff all day. Sometimes I'll put hummus or something with them. Yogurt, too. This works for me, because usually my dinner is usually really big. This way I'm satisfied throughout the day and don't have to worry too much about exceeding my calories for the day before I get off work.

If I'm out of produce, I pack soup or leftovers!

I have to ditto this. Got a lunch crock for Christmas and I love it. I always bring left-overs and now I really enjoy having something hot and nutritious waiting for me at lunch time.

Wow- BETHIETHEGREAT that sounds awesome!

I keep small cans of tuna in my desk (single serve), and bring a mixed salad in a mason jar or tupperware.

Another thing I love is raw or cooked and drained spinach (frozen, thawed and drained works fine too!), chickpeas, a little feta and some seasoning.

Height: 5' 11"
Starting weight: 228
Ultimate goal: 180-170

Currently working and going to grad school. Given my stress level and time constraints (and with my doctor's blessing), I'm not trying to lose a lot of weight, just be healthy and not gain. Once I get my degree I'll pick things up again.

My current fav: can of chicken breast, can of vegetarian refried beans (heating makes it easier to stir and gives better consistency), salsa and a little shredded cheese. Mix it all up and enjoy by itself, w chips or on a tortilla. (Usually 4-5 servings for me). Good warm or cold!

The featured tortilla pinwheels are also good and offer so many variations!

There is a new Crockpot called the LunchCrock which can make leftovers from the night before...plug it in when you arrive at work and have a hot meal by lunchtime. Check it out at Walmart or target...It is perfect for Dorm use and the office...from soups, oatmeal, veggies, meatballs, pasta, leftover casseroles.

i will bring left overs or sometimes oatmeal and a fruit. i also like to bring the steamfresh rice with veggies and add chicken that I ahve left over to it. cereal is also a go to for me at lunch
