I'm a vegetarian so protein is a big part of the equation. Here are some high-protein dishes that work for me:
Part skim ricotta pudding -- use Truvia or Nectresse, vanilla or chocolate, and some cut fruit such as bananas or berries. This is also good for breakfast.
Simple Tofu -- marinate in a dressing made from reduced-sodium tamari, ginger, garlic, strong mushroom stock, and herbs; throw on grill or bake
Seitan -- try in a stir-fry with vegetables
Beans -- try Edamame (soybeans) as an appetizer, or make a bean-themed meal such as tacos, chili, white bean/ kale stew, etc.
