Have you tried vegan cheese? It is easy to slice thinly, and is cool to put on tortilla wedges and bake till toasty and the cheese is melted. Or melt the cheese separately and drizzle on top for nachos.

Make an individual pizza with roasted tomatoes spread on a Josephs pita bread. Then add other roasted veggies like onion and mushrooms. You could try a vegan white "mozzarella" cheese. Bake and slice into wedges to share for a snack.
It can also become a really nice lunch. Consider a layer of spinach leaves.
