Our general experience with vegetarian recipes that are not high-carb:
- lentils, lentils, lentils!
- green, leafy vegetables
- sauces and salsas and spices ...
Decide whether you're more or less 'banning' carbs in an indiscriminate way or whether you're interested in carbs as sugars + starches, but minus fiber. That's why lentils are so good ... about half the 'carbs' are fiber. See also: tempeh and tofu. "Alternative grains" (usually not 'grains' per se, but kinds of seeds) are often good, too, especially quinoa and amaranth.
