Yowza, that's quite the list!
I know that Soy Delicious makes cultured coconut milk (aka yogurt) and you can also get almond yogurt (both are naturally dairy and soy free). Think about maybe yogurt breakfast parfaits with fruit (berries) and nuts you're not allergic to. Add some flax seeds. Search around for some sort of puffed grain that you can eat (millet maybe? is that gluten free?)
Assuming you have some sort of bread substitute that you can eat, add some turkey bacon with some cooked or raw spinach with mustard for a breakfast sandwich.
I googled gluten free vegan breakfast muffins and both zucchini and carrot based muffin recipes popped up.

(she's vegan, but not gluten or soy-free, so you'll have to hunt a bit and adapt the flours to ones you tolerate). As an aside, try her cashew queso - it's awesome! (edit: sub the lemon with a bit of apple cider or white wine vinegar - it needs a bit of acid, but I jut noticed you can't do citrus!)
