I bet you could easily do it with organic oat, wheat, or rice flour! Here's how I make my dumplings...
1 stick unsalted butter, softened.
2-3 cups flour
1 tsp salt
1/2 tsp black pepper
1.5 tsp baking powder
1 cup skim milk
Cut the butter with a fork in until the dry mixture resembles cornmeal. Blend in the milk until the dough is completely blended. If one cup is not enough, add milk one tablespoon at a time. Drop the dumplings into the broth one rounded tablespoon at a time.
I bet by using a low sodium chicken broth, especially a homemade low sodium chicken broth, you will also be making a healthier version. Using skim milk cuts the fat. Using organic whole wheat flour or oat flour will add more fiber.
