Chicken Ranch Tacos 3 lbs. chicken breasts-can use frozen 1 packet of taco seasoning 1 packet of Ranch dressing mix 1 c. chicken broth Toss in the crockpot all day and shred when ready. It's better if you let it sit shredded for half hour. Eat on tortillas with all the fixin's and great with ranch dressing too. My family's new favorite and I've shared and heard the same! I use my crockpot at least once a week.

Lb of beef stew, 3 or 4 potatoes, chopped, fresh mushrooms of your choice, cut into smaller pieces, 1 can of cream of mushroom soup, 1/2 cup of red wine (optional, I actually used white myself). Put on low for 8 hours. Great with bread or buns to soak up the slop.

The crockpot is well used in my house all year round. I have modified many recipes to cook in the crockpot, by favorite is chicken stew and dumplings - I do not have a recipe for it as I just throw things in the pot and let them cook for 8 hours, then I make a gravy and cook on high for a half hour.

The Salsa Chicken from SP recipes is wonderful! My own recipe is a lb of lea ground round (93% is best) potatoes, carrote, celery and onions, cover with 2 cans of stewed tomatoes. It is almost like meatloaf, but without the prep time & hassle.

I've never tried but I sure don't see why you couldn't cook tofu in the crock pot. I bet you'd want to be sure you had the pot on the low level.
Slow but sure is the way to go.

I use the crock pot at least once a week. Just google healthy crockpot recipes - there are tons you'll find!! One awesome new product that I swear by are crockpot liners. You'll find them at the grocery store near aluminum foil. Makes clean up so easy!!!!

Dried beans (like chick peas or bean soup mix) Again, I cook these overnight. While I'm cooking dinner, I do the simmering step as described on the dried bean package. Then they go into the crock pot with the suggested amount of water. NO SALT. It makes them tough. This almost smells better when you wake up in the morning than baked bread. You can now use the chick peas on salads, for your own hummus, etc.

Roast and veggies Brown a roast (you decide whether beef or pork) Place in crock pot with 2 small new potatoes per serving. Then clean and chunk LOTS of carrots, celery, onion, and cabbage. Onions go on the meat, then celery, carrots, and cabbage on top. Add about 1 cup water. Cover and cook on high for 4 hours, or low for 6 - 8 hours. I test my meat with a meat thermometer. i usually set this up in the evening before the kitchen is put to bed, and cook the meal overnight. When I was working, I'd get up and pack my hot lunch in a wide-mouth thermos and put the remainder in a shallow storage container. Then I'd get ready for work, and pop the cooled container into the refrigerator just before I went out the door.
