Roast and veggies
Brown a roast (you decide whether beef or pork)
Place in crock pot with 2 small new potatoes per serving.
Then clean and chunk LOTS of carrots, celery, onion, and cabbage.
Onions go on the meat, then celery, carrots, and cabbage on top.
Add about 1 cup water.
Cover and cook on high for 4 hours, or low for 6 - 8 hours. I test my meat with a meat thermometer.
i usually set this up in the evening before the kitchen is put to bed, and cook the meal overnight. When I was working, I'd get up and pack my hot lunch in a wide-mouth thermos and put the remainder in a shallow storage container. Then I'd get ready for work, and pop the cooled container into the refrigerator just before I went out the door.
