Thank you for the recipe!! And yes, def-o buying a few bread loaf pans for myself in a couple weeks!! And an electric slicer :)

I've lost and gained, lost and gained. Now that DH has been diagnosed with Diabetes, I have restarted my drive force.

I am down 30 pounds. DH is down 4 inches!

I have no visible show of loss, but I know I am losing.

WHOLE WHEAT MULTIGRAIN BREAD

1 cup quick oatmeal
1 teaspoon salt
4 tablespoons melted butter
1/2 cup warm water
1 cup whole wheat flour
1/2 cup wheat germ
2 3/4 cups cold water
1/2 cup molasses
2 packages yeast
1/4 cup honey
1 cup rye flour
1/3 cup bran flakes
4 cups flour (more as needed)
1 cup chopped nuts your choice


Combine oatmeal and 2 cups cold water; bring to boil in saucepan. Cool. Place in electric mixer bowl; add molasses, salt and butter; blend and cool to lukewarm.

Blend yeast with warm water, honey and stir. Let stand until foamy. Add the yeast mixture and 3/4 cup cold water; beat smooth. Add flours (except bread flour) and nuts and seeds and mix well. Add bread flour as needed to make a workable soft dough.

Turn out on floured board; knead for 10 minutes. Place dough in lightly greased bowl; cover with damp cloth. Let rise until double. Punch down. Divide in half. Place in buttered bread pan. Cover; let rise.

Bake at 375 degrees for 35-40 minutes. Makes 2 loaves

If you are going to start making bread , maybe invest a few dollars and buy another loaf pan.

I have been buying multi-grain and whole wheat nut bread... It's about $4 per loaf.

I want to make my own. I cannot find any recipes. I can find *partcial* recipes, but nothing that comes close to what I actually want.

~ I do not have a bread machine.
~ I do have a Kitchenaid *fancy* stand mixer w/ hook attachment.
~ I have *one* "regular" bread loaf pan, but I can reuse it
~ I have 3 or 4 mini-loaf pans.
~ I also have a crock pot...

I truly just want to try my hand at homemade bread that I have made from scratch.

I need recipes that arent going to make sweet wheat bread. I want lots of oats, wheat, nuts, etc etc... but the nuts have to be tiny, because hubby has no teeth for huge pieces.

I like the 9-grain; 12-grain ... etc breads too. I just cannot find any true recipes that stick to the real way to make bread... Anyone that can help, I'd appreciate it. Thanks!
