There's a great chicken enchiladas recipe from Cooking Light that I've made many times:
I also like to do a taco bowl, where I put everthing I'd put in a taco (ground beef or turkey, lettuce, tomatoes, onion, salsa) in a bowl, minus the carbs. I add some freshly chopped cliantro and black beans, and a dallop of greek yogurt to sub in for sour cream.
