I love having barley as a side with almost any meat... I saute onions, celery and garlic in a little EVOO, add a cup of barley and about 2 1/2 cups of chicken broth plus a little salt and pepper. Bring it up to a boil, cover and simmer until all liquid is absorbed. That's it! You can also do the same thing and add a little fresh spinach towards the end so that it wilts down. I've also added some feta cheese at the very end. These are my favorite ways of making it.
