Lentil Mulligatawny Soup

3 teaspoons olive oil
2 onions – chopped
2-3 cloves of garlic
1 large carrot – chopped (more if you like)
2 stalks of celery - chopped
1 green pepper – chopped
1 turnip or parsnip – chopped – I like turnips in this soup
1 large pippin apple – chopped – if you can’t find pippins – use a firm apple
1 tsp Curry Powder
2 Tblsn Parsley
5 cups water
2-4 cups cooked Lentils
salt to taste
Optional: 1- 2 cooked chicken sausages – thinly sliced

Saute onions and garlic in olive oil. Add chopped vegetables, apple, seasonings and water. Cook about 30 -45 minutes until vegetable are tender. Puree lentils in the food processor or blender. Add lentils and cooked “sausage” slices to soup and heat through. I like to puree about 2 cups of lentils and add another cup or so whole to add texture to the soup. Salt to taste. Heat thoroughly to meld flavors on a low heat. Freezes well for lunches.

I like to make big batches of bean soups to freeze. Makes for easy lunches later :-)

My favorite was inspired by chili...an onion and a bell pepper sauteed then added to beef broth. I then put in kidney beans, some pressed garlic, and season with cumin, chili powder, and Worcestershire. I have also added chile sauce to make it spicy.

For a complete meal, you can throw in rice.

It's all to taste, so put your "to taste" in the recipe calculator!

My dad always makes a ham and bean soup. My MIL makes a soup with baby lima beans and sausage and stewed tomatoes. (I am going to input and check the calorie count of it in a bit). Does anyone else have any favorite healthy bean soup type recipes?
