Pleasing Pumpkin Tarts
November 2005 HE newsletter

1 (4 serving) pkg. JELLO sugar free instant butterscotch pudding mix
2/3 cup Carnation Nonfat dry milk powder
1 (15 ounce) can Libby's solid-packed pumpkin
1/4 cup water
3/4 cup Cool Whip Lite
1 teaspoon pumpkin pie spice
1 (6-single serve) package Keebler graham cracker crusts
2 Tablespoons chopped pecans

In a large bowl, combine dry pudding mix, dry milk powder, pumpkin, and water. Mix well using a wire whisk. Blend in 6 Tablespoons Cool Whip Lite, and pumpkin pie spice. Evenly spoon mixture into graham cracker crusts. Top each with 1 Tablespoon Cool Whip Lite and 1 teaspoon of pecans. Refrigerate at least 15 minutes.

This is a great addition to any meal. Put it on grilled chicken or grilled steak. Add it to a bowl of beans or eggs. Its a great way to get your full servings of veggies without the guilt. To change it up add some diced cucumber or diced avocado. put it in a taco or over enchiladas. Sautee it with a teaspoon of olive oil and throw in some shrimp o or chicken, or just serve with tortilla chips. It also can be served over a bed of cabbage with a dollop of sour cream and maybe some shredded cheese. The versatility of this salsa is limitless!
