Make a batch of soup and freeze it in individual portions (Ziploc makes 2 cup containers with a screw top that are great for liquidy stuff that you want to transport).

I've lost about 35lbs and gone from slightly over "obese" by BMI to just into "healthy"!

And I can now run for over 5k!

You could cook up a big batch of whole wheat noodles at the beginning of the week and add some of those to your mug.

My boyfriend loves those, I can't stand them but I've found a few ways to be able to tolerate them if I really need some soup. They're convenient in a pinch but I wouldn't rely on them solely. However, you could use one packet but add some frozen mixed veggies to it to stretch it and then add some low-sodium chicken stock or water if you need more liquid. You could also stretch it with some low-fat cheese on the side, a piece of toast, etc.

Also, you could make your own soup at the beginning of the week and eat on it all week if you have the time. Just add some chicken, some veggies, and some water/stock to a pot or a slow cooker and simmer for as long as it takes to get the chicken cooked (or used pre-cooked for faster prep). Add already cooked pasta at the end or uncooked pasta at the beginning.

HTH!

I LOOOVE those quick chicken noodle soups (you know the ones, that are FULL of sodium?) I love Ramen... but those are a lot of calories, fat, and sodium. I found an alternative.. Lipton Cup of Noodle. They are 45 calories a packet (I usually make two) but if I make two there is about 50% of my sodium in one mug!!!

I would like to find an alternative..

I keep low sodium chicken stock on hand. My goal is to be able to heat up a mug of chicken stock and find some sort of noodle to go in it that cooks REALLY quick.. Any suggestions??

Goals:
11/27/09 - Down 12 lbs
Almost there!!
12/25/09 - Down 20 lbs
5/01/10 - Down 40 lbs
6/01/10 - Run a 5k?

BMI: 26.4

Baby steps.

Chef Meg's Slow Cooker Vegetable Curry
Submitted By: CHEF_MEG

Slow cookers aren't just for meat! This is a tasty, affordable one-pot vegetarian meal that's filling and perfect for your slow cooker. You can also add shrimp during the last 20 minutes of cooking. If the dish is a little too spicy for the kids, add 1 Tablespoon of plain yogurt to their serving. Serve with a glass of milk and a cucumber salad. Full Recipe
