The best way to make a cake is to make it into cupcakes. You can make ANY cake into cupcakes. By making them into cupcakes, it's a lot easier to portion control.

If you go here, you get to see the picture (and a video about it) but this cake is amazing. It has become a very popular dessert at our house.

Angel Lush Cake

Angel Lush Recipe Prep Time: 15 min
Total Time: 1 hr 15 min
Makes: 10 servings

INGREDIENTS:
1 pkg. (4-serving size) JELL-O Vanilla Fat Free Instant Pudding
1 can (14 fl oz/398 mL) crushed pineapple in juice, undrained
1 cup thawed COOL WHIP Light Whipped Topping
1 store-bought angel food cake (284 g)
10 fresh strawberries or fruit of your choice to garnish the top

DIRECTIONS:
MIX dry pudding mix and pineapple in medium bowl. Gently stir in whipped topping.

CUT cake horizontally into three layers. Place bottom cake layer, cut-side up, on serving plate; top with one-third of the pudding mixture. Repeat layers two times.

REFRIGERATE at least 1 hour. Top with strawberries just before serving. Store leftovers in refrigerator.

Serving Size = 1 piece (100 g)

This is a fruit cake recipe i was given to use as christmas cake. Very nice if you like a heavier fruit cake

1 Kilo dried fruit.Raisons, sultanas etc)
2 cups of black coffee(warm)

Soak overnight
Add small bar chopped chocolate(optional)
2 cups Self Raising Flour

Mix well, put in greased & lined 8inch tin
Bake 180Deg for 50-70 mins

If you normally make your cakes from a cake mix, it is very easy to make those much lower in fat and calories. One popular trick is to add about 12 oz of diet soda instead of the eggs, oil and water, the recipe calls for, otherwise bake as normal. In my opinion, diet cream soda gives the best result.

If you don't want diet soda, here is another way to do it that I used a lot with very good results. Add fat free vanilla yogurt instead of oil. Add all egg whites, no yolks (about 9 tablespoons for a standard one that requires 3 eggs) and still use the oil. This raises the calories about 13 per serving over the "as packaged" calorie count with no added fat!!

Angel Food Cake would be an option.I guess if u r going to eat cake this would be the one to eat..U could dress it up with some fruit and maybe low fat whip topping.. See the nutrition value on the whip topping, because some low fat are worse than regular it may have more sodium. Check out the spark recipes I like these because it lists the nutrition value. SUGAR-FREE PUMPKIN MUFFINS

1/4 c butter softened
1/3 c Splenda
1/4 c Brown Sugar Twin
2/3 c canned pumpkin
1/2 c 2% milk
1 egg + 2 egg whites
2TBSP molasses
1 tsp orange zest
1 c flour
1 c whole wheat pastry flour OR whole wheat flour
2 tsp baking powder
1 1/4 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp cloves
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp salt (optional)

Streusel Topping
1/3 c whole wheat pastry flour
3 TBSP brown sugar
2 TBSP cold butter

Preheat 375

Cream first 3 ingredients together until fluffy.
Add next 5 ingredients and mix well.
In a separate bowl, combine dry ingredients and add to wet ingredients, mixing until just combined. Fill greased or paper lined muffin cups 2/3 full.

Streusel: mix together flour and brown sugar then cut in butter til resembles coarse crumbs. sprinkle on muffins.

Bake 25-30 minutes, testing with a bamboo skewer or toothpick.
