I use it in my smoothies. I know, it takes some getting used to the idea of a green smoothie but it is very delicious and nutritious. One recipe to try is an apple, a banana, and a huge handful of kale in a blender with 1 cup of water. Yum!

As a southern girl, I've loved kale all my life. But, now that I've found Spark (kind of like seeing the light-lol)I no longer cook it for hours, loaded down with a pound of fatty ham. It's even better now! I love the kale chips or kale just steamed until it's tender. I've also learned it's worth the extra money to buy it at the farmer's market or in specialty food stores where the leaves are smaller and usually grown organic. Much better flavor!

I agree with you, kale is wonderful.
I usually sauté it in a LITTLE oil, then add approx 1/2 cup water and steam it. Freezes well too.

Try Italian Beans N Greens

Sautee the kale with garlic and olive oil, add a can of canneloni beans and a minced onion or leeks. When the onion is cooked and the Kale has reduced, add a can of Fat Free Chicken broth or Veggie broth and service over hot bowtie pasta.

I love chopped kale sauteed with garlic and lemon pepper. A little bit of olive oil and the water that is left on the leaves from washing provide enough liquid to cook it down. Yum!

I just got this Kale recipe in a newsletter. I really want to start eating Kale, and I am sure I never have had it before. I'm looking for the calcium value, but I want it to taste good.


De-rib the kale and cut into thin strips (about 3/4" wide). Toss strips in olive oil & salt (or garlic salt or balsamic vinegar, whatever you feel like). Lay flat on a baking sheet in a single layer.
Cook for 20 min at about 300 degrees until crispy. Eat & enjoy. It gives kale the texture of potato chips and helps to remove the bitterness.

I need to try that soup!

With kale, I chop it and sauté it in a little butter. Add a dash of red pepper flake and that's it.

I have to sneak it into dishes as my DH "doesn't like" it and will refuse food if he thinks it has kale. The olive garden soup recipe is awesome (and DH will eat it). I like to make kale chips - they are so yummy and a big hit with my 3-yr old son.

Sorry this might just drive you crazy, as it has me but I found a recipes on sparks for soup like Olive Garden sausage soup.
It has Kale and it was the first time I had it and I liked the Kale and loved the soup.
I printed it off but I can't find the person who gave it or to rate it.
