I'd suggest a healthy casserole that can be frozen and used whenever is most convenient for them. Something they can just throw in the oven and eat on a day when cooking just isn't going to happen.

I'm a little late on this but in case it can be of any help to anyone I wanted to chime in. Things that can be grabbed quickly are great like cut up veggies/fruits, healthy trail mix, A healthy casserole like a veggie lasagna... just watch the gassy veggies as mentioned before as some nursing babies can be very sensitive to them.. If mom isn't nursing then no worries there..

It is such a sweet gesture and I'll tell you more appreciated then you may realize!!

ANYTHING, except for the the suggestions before mine for a nursing mom.

A new baby is a new adjustment and having someone help get that food made is a blessing. And you are a kind good friend to think of it!!!

I have a few suggestions of what not to make if your friend is nursing her new baby. When you are nursing what ever you eat your baby eats, and their are many things a baby's digestive system can not handel.

Nothing to spicy, or gassy. For example, no broccoli or mexican food.

Good old chicken and rice is always a safe bet.
