Your muscles will not properly recover if you don't take a least one day off from working out--the muscles tear(especially during strength training) and for them to rebuild and recover they do need sufficient rest. You have done an amazing job and absolutely deserve major kudos but please take your rest days and get your sleep, your body will thank you.
Vigorous cardio and strength training puts stress on your muscles. Rest days give your body the chance to catch up on all the little repair jobs and are when improvements to your muscles and fitness happen. If you don't rest, your muscles never get stronger.
Rest days ultimately help your longer term performance, and reduce the risk of injury (which can derail your exercise plans a lot more than a single rest day).
A rest day doesn't mean you have to do nothing. Something like a 20 minute walk can help keep you in the groove of regular exercise, without really taxing your body.

As a therapist I must clarify that rest has a large parameter. Rest can be interpreted as giving some muscles a break while engaging others. It also depends on if your doing cardio, ST, yoga, swimming, etc. If you enjoy exercise every day pick an activity that is dissimilar to give the muscles and cardiovascular system a rest. There are too many activities to work the muscles so that we don't have to stop everything. I think scientist and exercise people will see over time that any day without some physical activity is not healthy! I have been exercising for many years without taking a complete day off and I don't see any of the issues mentioned. It all depends on the individuals level of fitness. There are many other variables such as injury etc. that play into this situation. In my case exercise makes me happy and without it I am more likely to get sick!
Gratitude unlocks the fullness of life. It turns what we have into enough, and more. It turns denial into acceptance, chaos to order, confusion to clarity. It can turn a meal into a feast, a house into a home, a stranger into a friend.

Rest days reduce our risk for injury, burn out and fatigue.
Rest and recovery days allow our muscles a chance to repair. If our muscles don't have a chance to repair, they will never get stronger. The right amount of exercise will keep us fit and healthy. Too much exercise can actually break down our immune system.
Over training can happen to us all and when it does, you may notice that you have problems sleeping. you may notice colds/flu seem to linger. You may notice that injuries don't heal as quickly as they should. You may notice that your energy levels decrease.
That's why we need to take a rest day.

To preface, you have to understand that in over a year and a half I have gone from pretty much a total couch potato in such bad shape that I dreaded carrying a laundry basket up 1 flight of stairs to actually loving and actually craving my workouts. I have been really pushing my fitness limits over the past few months to hit a few different goals. Basically any days of missed exercise over that time has been due to being away, very ill or too busy. That amounts to maybe 8-10 days out of the past 3 months.
I've worked out every day this week (1 day of weight training class, 3 days of Zumba classes and 2 days using cardio machines for an hour). Tomorrow I have 2 fitness classes planned (1 Zumba and 1 hour in a weight training/toning class). Because of that I decided to take today off but I keep changing my mind as my habit is to go use the cardio machines at the gym for an hour on Sundays. I don't want to be obsessive about exercise but I need to be convinced that it's ok, and even advisable to take today off.
