I have been doing 5x5 for the past 10 months. Even at a caloric deficiency, my strength increased almost linearly for the first 2 months. Then it stalled, for about another two months. Then I went into a slight caloric surplus, and my strength started to increase again. After 6 months of eating at a slight caloric surplus some days and at maintenance at others, I have gained some fat too. Now I am back to caloric deficiency to get rid of that excess fat, but hopefully I get to keep the muscle.
