Just wanted to agree with everyone who has recommended the 30 Day Shred - if you stick with the modified versions of the moves, and stick to level 1, it should be accessible to a beginner. The program is structured so that you're supposed to spend 10 days at each of the 3 levels, but I'd recommend holding off on progressing to level 2 until you're able to get through the whole level 1 workout without any modifications.
She has a relatively new kickboxing DVD (I forget its name, but I own and like it) that I think might work for a beginner as well (there's a lot of punching and kicking, but you don't have to keep up with the fitness models to follow along, so you can slow down the moves to meet your own abilities).
Personally, I'd avoid the Yoga Meltdown and Ripped in 30 (both of which I own) for beginners, because she employs some more advanced moves in those DVDs, and if you don't know how to do the moves, you could hurt yourself while attempting them without the supervision of a trainer.
