i made an egg white omelet with spinach, put 1/2 of it on a whole wheat tortilla, with 1/4 cup fried potatoes. folded it in half and ate it for breakfast

I did a stir fry of sorts. Not easy when you only use on teaspoon of oil. Bell pepper, red onion slice thin, sauteed, with spices and whole wheat capellini pasta topped with peccorino romano cheese, of course.
I got out the old food processor and made a cabbage salad with carrots and red onion dressed with sesame oil and rice wine vinegar and fresh ginger.

I cooked a yam and some stuffing to go with a roasted chicken; also had cranberry sauce with it. Yum!

I made a huge pot of lentil soup. Plan on bringing it to work in single serving containers for lunch.
