No, you can't see more than one week at a time. Spark has done this because they feel that people stick to goals better with a short term focus. Personally I think 2 weeks is better so at least you can plan out your week for your shopping without having to wait till the last minute to do it! Gives you a bit of a buffer. :)
You can change anything. With meal plans you can switch items out for other items and just tick when you've eaten.
If, for example, the meal plan suggests a coffee and 2 plain biscuits and instead you have a handful of nuts and a small apple, you can simply not tick the coffee and biccies, and manually add in an apple and some nuts.
