It's hard but we can do it! I think this week I'm focusing on some healthy substitutes for some of my favorite foods, I'm a vegetarian, one of my favorite local pub food is a black bean veggie burger on a pretzel roll with grilled onions, guacamole, cheese, and roasted red peppers with a fries and a side of curry sauce. This is totally over board (but I love it so).
So today I baked a ciabatta roll, used only the bottom half, and cooked up a spicy black bean burger. I made a quick batch of fresh guacamole with 1 tomato, 1 avocado, 1/4 cup chopped red onion, a handful of cilantro and lemon juice (out of limes). I made an open face sandwich topped it with a tbsp guac and some baby romaine. Instead of fries I found these lentil chips at the grocery store and they are pretty good. Anyway totally felt like I got my burger and fries but in a much healthier way. It really satisfied my week 2 unhealthy cravings.
