I blew it yesterday...though tiny strides. I had company over yesterday for a drink and appetizers. This is very rare for me these days, so no worries about this over time, but having this take place on day 3...well poop.
The good news. I ate a regular lunch rather than skipping for the evening and when the guest left I packed up the cheese, salami and crackers and went to dinner, keeping it meatless. Trouble I was a bit tipsy off the 2 drinks I had and over ate.
I must say though that previously I would have polished off all the appetizers, and made a full meal after...so cutting calories did take place.
I only have drinks perhaps 4 times a year these days so no worries.
Mashed potatoes out, mashed cauliflower in.
Cut up florets and boil them soft. Drain...and let them drain well, to a dry point. Place in blender, add 2 tablespoons of sour cream/or Greek yogurt, and garlic salt. Blend till smooth.
Now these are normally not warm enough so I heat them a little in the microwave before placing on the place...but the long draining time where they cool...really helps them from being runny, so worth the trouble.
