I keep granola bars and nuts at my desk for snacks. Low fat microwave popcorn is another good option. Some times, I bring fresh fruit that is on sale.

Of course, the best way to stop stress eating is to try to reduce your stress at work. Whenever you feel like eating, why not take a short walk ? If you can, walk outside. Literally walk away from your desk and the food even if it's only for five minutes. If you can't get outside, then take a short walk around the office. That short break may be just the thing you need to help reduce your work stress.

I'm a firm believer that stress is a neglected aspect of weight gain. if a person could reduce their stress, they'd automatically reduce their waistline.

I keep popcorn at my desk, those little 100 calorie packs by Jolly Time. I also have instant oatmeal and 'kid sized' Cascadian Farms oatmeal raising granola bars. I have all my bases covered this way- Salt/crunch (popcorn), or sweet (oatmeal, granola bars). I used to keep fruit at my desk- Apples, pears, oranges, etc., but I am not at my desk frequently enough for those and they would go bad.
