Lauren - Congratulations first on those 30 pounds. That's quite an accomplishment to celebrate.
I know exactly how you feel. I had been losing 2 pounds each week consistently for a couple of months, then it slowed to 1 to 1.5 pounds a week. Then during the entire month of July I lost 1.5 pounds. Not a week - for the entire month, with no movement at all for a couple of the weeks. I did go on a five day vacation where I didn't track my food and had one day when company stopped by that I didn't track, but I didn't go wild on those days and stayed within my range every other day that I did track, and I had tried to be as honest as I was able (given I was estimating in some cases). Well, enough about my problems...but I DO know how you feel and you asked how we cope.
I was very discouraged I'll have to admit, but I never doubted I was on the right track. If I had only lost weight for a couple of weeks after beginning SP, I would have thought it was just water weight, but it had continued long enough I was certain this approach was different from any other I'd tried. Not only was it more successful, but I was enjoying my food more than ever in my life, even compared to times I was NOT "dieting".
So one particular day when I was overly discouraged, I stepped back and asked myself what would it look like if I threw in the towel and gave up? What would I want to be different? I actually wouldn't want to change anything about my menu plans day to day, but I'd want to eat ice cream more and relax more when I ate out with friends. So I set about seeing if I could fit ice cream into my range more often. I actually could, given that it has a lot of the nutrients I struggle with meeting - protein and calcium, and ice cream sandwiches even have fiber. I decided to aim for the top of my range on days when I'm eating out to give me more latitude. After I made a few adjustments, I was contented again with my "diet" so it didn't bug me as much when the scale didn't budge.
I do want to tell you, though, that the scale dropped 1.5 pounds this week. Not to gloat over it, but to let you know it can happen. I don't think I had done anything differently the prior week, but my weight can fluctuate as much as 5 pounds during the day. I might have lost that weight any time along the way and it just finally showed up at that weighing.
Keep the faith. I know it will happen for you, too. Make sure you don't cut back too far in frustration. It's important to get all the nutrition your body needs to keep it in peak performance.
