It could be that your body has gone into starvation mode due to your extreme exercise and low calorie intake. You muscles are probably holding onto water as well. With the number of calories you are burning with Insanity, you need to eat on the higher end of your range or go back and adjust your calories to take into account that burn.
And if you are looking for a reasonable, maintainable weight loss, 2 lbs in 2.5 weeks isn't bad. Some weeks, I lose pounds, some weeks I don't. It's a cumulative amount over a length of time.
Don't get discouraged, if you eat healthy and work out, you will lose weight, you just need to make sure you eat enough to maintain that level of exercise.
