Good for setting up goals and finding a way to make them work in your life!
Are 12-hour shifts regular or occasional for you? If they're a way of life, I'm thinking that they have a major effect on your day, including when you eat & sleep.
Denying ourselves is hard and often can't last. Could you consider modifying this one goal? If your body is telling you it NEEDS some nourishment, it might be good to listen and feed it.
Then the issue shifts to making the RIGHT food choices. Planning ahead, even cooking ahead so healthy food is ready & waiting for you, could be helpful. Maybe packing lunch and a snack or two would help, to avoid coming home famished.
Three meals and a snack don't work for everyone. If you could modify your daily intake to cover your whole day, it might be a more sustainable plan. And life-long changes are golden!

I know what you mean. I wirked 12 or 13 hr shifts for about 25 years. I found if I didn't have enough sleep I was hungrier and ate more.

Trying not to eat after 8. Much harder after working 12 hour shift :( just tired
