Salads! They only take as long as it takes to chop. A favorite of mine in the summer is a bulgur and bean salad. You don't need to boil the bulgur, you just boil water, pour it over the bulgur, and let it sit until it's fluffy. Boil the water in the kettle and the bulgur is done in less than 15 minutes.

Meanwhile, I chop tomatoes, cilantro, open/drain/rinse a can of black beans, a can of corn, some bell pepper, and green onion. Mix that with the bulgur, then add some avocado. For dressing I just use a bit of olive oil and lime juice, then add chili sauce (sambal oelek or sriracha). Literally takes less then 15 minutes, has all the important nutrients, and packs very well for lunch leftovers.

Quick and Easy tostada's or quesadilla's...if you buy the inexpensive corn tortilla's (less than a dollar at Kroger), you can actually heat them one or two at a time in the microwave with a little cooking spray until crisp. Top with drained and rinsed black beans, chopped lettuce, tomato, black olives, a sprinkle of whatever cheese you like and serve with salsa, fresh cilantro and greek yogurt or low fat sour cream. I usually chop up things like lettuce, onions, scallions, cilantro, etc on Sunday so i have everything on hand ready to go for quick salads or wraps. You can also use any kind of leftovers on tostada's or in quesadilla's. If I want cool and refreshing, I make tostada's. If I want something warm and filling, I toss everything into a healthy tortilla (whole wheat or low carb) and make it brown and toasty with a little gooey cheese in the center.

Things that work well for either: leftover beef, chicken, beans, fresh veggies, quick cooking shrimp

Pasta with pasta sauce from a jar and frozen vegetables is my go-to fast meal. I boil the vegetables in the same pot as the sauce. I usually also have time to fry some ground beef before the spaghetti has boiled.

Soup and sandwiches. "Homemade" soup is so easy when you start with packaged broth - chicken or beef or even vegetable. I throw in some veggies, free, frozen, left over, a starch of some sort - so potatoes, noodles, rice, quinoa - whatever's on hand. And I'll throw in some protein. Beans, eggs, left overs....

A baked potato with a little butter, sour cream, cheese, and bacon bits if your really feeling naughty! I peel the potato and then slice it in a bowl with a little water and microwave it for 5 minutes. Then mash potato and the water with a fork and add the toppings.

I love lettuce wraps. with buffalo lemon pepper chicken and quinoa.

chicken wraps seasonedwith lemon pepper. oven or sauteed.

once cooked chop in cubes add buffalo sauce.

My fastest meals are usually having breakfast for dinner. Eggs are easy - fried in a non stick pan, scrambled, poached, soft boiled with whole grain toast and a bowl of sliced fruit is also satisfying. And dinner is on the table in 15 minutes or less.

You can add vegetables to the eggs as well.

1st Goal: 18lbs by June 1 - Met goal on 4/28

2nd Goal: Onederland by July 31

I am a huge fan of lettuce wraps. Depending on your filling they can be super fast.

A few examples: Taco, buffalo chicken, tuna salad, BLT, left over chinese food.

Or you could have sautéed chicken with acorn squash and rice. You'll need: boneless skinless chicken breasts (pounded thin or cut in half horizontally into thin cutlets), a shallot, butter, 3/4 cup chicken stock, 3/4 white wine, 1 tablespoon cream (optional), fresh or dried thyme, an acorn squash, brown sugar, salt, pepper and rice (boil in bag if you really want it easy).

Prepare the rice. While it boils, chop the shallot (set aside) and split the squash in quarters. You can poke some holes in the squash and microwave for a few minutes to soften it up and make it easier. Then microwave on high in 3-4 minute increments until the squash is tender.

Meanwhile melt 1 teaspoon of butter over medium high in a nonstick skillet. Season the chicken with salt and pepper and sauté until done- a few minutes per side. Remove the chicken from the pan and cover to keep warm. Add another teaspoon butter to the pan and sauté shallot until tender. Add 3/4 cup chicken stock, 3/4 cup wine and thyme (to taste) to the pan and boil over high heat until reduced to about a 1/2 cup.

While sauce reduces, sprinkle tender squash with salt, butter and a touch of brown sugar and microwave 45 seconds longer to melt butter.

Once sauce is reduced stir in a tablespoon of heavy cream. Serve chicken and rice with sauce spooned over and a wedge of squash on the side. Should take about 20 minutes start to finish.

You can use different herbs in the sauce or jazz it up with: olives, artichoke hearts, sun dried tomatoes, mustard

Or replace the wine with red wine, orange juice, apple cider (nice if you use sage as the herb and sauté some apples with the shallot)

You could also use fish fillets or thin cut pork chops instead of the chicken

Here's a super fast meal that only takes as long as the pasta (if you're quick). You'll need: dried pasta (spaghetti, linguine, fettuccine), 28 oz can crushed tomatoes, dried or fresh basil, small onion, olive oil, balsamic vinegar, mixed salad greens, another fresh or dried herb (I love fresh thyme), salt and pepper. Also a jar with a secure lid.

Put water on to boil for the pasta. Meanwhile, chop the onion and herbs (if using fresh). Pour a drizzle of olive oil in a saucepan over medium/medium-high and cook the onion until tender. Then add the tomatoes, basil and salt and pepper to taste. Reduce the heat to low.

Now the water should be boiling, so put your pasta in. Then get your jar and add olive oil and vinegar to make a vinaigrette. The ratio is 3 parts oil to 1 part vinegar- 3 teaspoons oil and 1 teaspoon vinegar works well for one person- 6 tablespoons oil and 2 tablespoons vinegar will be enough for a family with some left over. Add a little salt and pepper to the jar and fresh or dried herb to taste (use whatever tastes good to you). Put on the lid and shake well. Now the pasta should be about done and you have a tasty fresh sauce and salad with homemade dressing to go with it.

If you want to be all fancy you can add stuff to your pasta sauce- mushrooms, diced bell peppers, sausage, cheese

Or add veggies when you boil the pasta- zucchini, eggplant, shredded carrot

Or change up the dressing with- mashed up berries or jam, ginger, minced garlic, a spoonful of pesto, lemon juice instead of vinegar.
