The big stems on your broccoli is still usable. A lot of folks don't like to use it because it is tough, but if you take a vegetable peeler and just peel the tough part off, you get the tasty, tender inside to use in soups, sautees and salads.
It is actually my favorite part of broccoli! Steamed with a little olive oil and lemon and pepper- Yummy!
