I have one weakness and that's my flavored coffee creamers. It never occurred to me before that I could make it but a few months ago I stumbled on a homemade (but still fairly high in calories, fat and sugar) recipe for a different flavors of creamers. I experimented and made my first batch which was caramel vanilla. Then when we hit October, I decided to try a pumpkin spice flavor and it is sincerely the BOMB! I love it so much! So, I thought I'd share the recipe for anyone else who wants to try it.
2 cups fat free dairy cream
2/3 cup powdered skim milk powder
1/2-2/3 cup splenda (depending on how sweet you like it)
2 tbsp melted butter (I believe this helps it thicken as it sits in the fridge)
1/2 cup water
1.5 tsp vanilla extract
2-3 tsp pumpkin pie spice
(optional-2-3 tbsp canned pumpkin puree...I used this in my first batch but didn't notice much difference when I didn't use it in my next batch).
Dump all ingredients in a blender and blend on high until totally mixed. You might want to scrape it down once part way through. Pour into a container and refrigerate. Shake just before each use as the spices tend to settle.
