I don't like peppermint in my coffee, but I'm sure the same base recipe above but with cocoa or low sugar chocolate syrup and peppermint extract would work. The next flavor I want to try is going to be chocolate almond with cocoa or that syrup plus almond extract. I also love maple flavor so I might try a maple/vanilla extract kind as well. Making my own coffee creamers that are healthier than the chemical filled ones has been so liberating!

Flavored coffee creamers are one of my weaknesses too. I've been making my own as well with mixed results. My favorite so far is cinnamon honey. I'll have to give your pumpkin spice a try as it was one of my favorite store bought ones. If you find a good one for peppermint mocha flavored I'd love to have it. My first attempt at it was a big fail.

I have one weakness and that's my flavored coffee creamers. It never occurred to me before that I could make it but a few months ago I stumbled on a homemade (but still fairly high in calories, fat and sugar) recipe for a different flavors of creamers. I experimented and made my first batch which was caramel vanilla. Then when we hit October, I decided to try a pumpkin spice flavor and it is sincerely the BOMB! I love it so much! So, I thought I'd share the recipe for anyone else who wants to try it.
2 cups fat free dairy cream 2/3 cup powdered skim milk powder 1/2-2/3 cup splenda (depending on how sweet you like it) 2 tbsp melted butter (I believe this helps it thicken as it sits in the fridge) 1/2 cup water 1.5 tsp vanilla extract 2-3 tsp pumpkin pie spice (optional-2-3 tbsp canned pumpkin puree...I used this in my first batch but didn't notice much difference when I didn't use it in my next batch).
Dump all ingredients in a blender and blend on high until totally mixed. You might want to scrape it down once part way through. Pour into a container and refrigerate. Shake just before each use as the spices tend to settle.
