My first thought is stir-fry, too, but would also do a shredded salad with the cabbage, carrots, and celery and incorporate the mushrooms in to a ginger sesame dressing for it. Another thought would be to saute the shredded salad, add some hoisin, and put it in to either rice wraps or lettuce wraps for a mu-shu type of meal.
