I've been on a hunt for recipes that are easy, inexpensive, and make several servings- perfect for packing into containers for last-minute lunches and dinners. A couple weeks ago, I tried the Tuna Noodle Casserole from the Sparkpeople cookbook. This weekend, I think I want to take on Salsa Chicken.
I just know that I'm going to need to change up how I serve it to keep from getting bored, so I want to think of as many different ways as possible of serving it.
So far, I've thought of:
-Salsa chicken with shredded lettuce and cheese in taco shells
-Adding beans, cheese, and lettuce and serving over tortilla chips or in a tortilla as a burrito
-Serving over brown rice, quinoa, or whole wheat pasta
Any other ideas? I want to have some fun with this recipe.
