Check out the Chicken Bok choy recipe add ginger and as many vegies as you like to cut calories and stretch it! It's really good.

I like to make mini frittatas in cup cake trays. Just beat the eggs, substitute with extra white if you want, and add anything you want, spinach, peppers, salmon, feta. They always go down really well. They do cook rather fast though so you want to cook your veg through first.

Hi a good one is Cole Slaw it always goes well with most meats add lite mayo lemon juice, onions, carrotssome sugar free sugar,some cider vinegar, tastes so good and guilty free. Aloha

One thing I like to bring is mini skewers - too easy - use toothpicks for the skewers. For each toothpick, add a piece of raw red pepper, a meatball lightly covered in a sauce and a pineapple tidbit (canned the type packed in water). Arrange them on a platter, add a few carrot and/or celery stick if you want. These are usually served at room temperature so you don't need to worry about keeping them hot.

For the meatballs, I use frozen and look at the nutrition label and choose one of the lower calorie ones (no one will really notice if they are chicken or turkey!). I heat them up in a thin layer of a sauce like teriyaki or dry garlic and then let them cool before assembling the mini skewers.

Men usually love these, and I've never had a problem with leftovers.

God, I hate these types of things. Even if it's just "dinner with the family" and I can't cook at home while on this healthy lifestyle. I think the CHEAPEST, most abundant way to go would be a salad. You said there's always stuff you don't like to eat at these things - well, what do you enjoy? Help us out and maybe we can give more...creative suggestions. I'd also check spark recipes. You can specify what the occasion is, what you wanna cook (breakfast, lunch, dinner, dessert), etc. That way you know what you're intaking.

I like to do a pasta dish. I brown ground turkey, add chopped spinach, reduced fat ricotta cheese, sauce and top with part skim mozzarella.

For dinner tonight I made the Eggplant Bake with Peppers and Mushrooms and it was delicious!! Here's the link:

How about a brown rice or quinoa pilaf? You can mix in nuts, veggies, meat, and even cheese to make it a complete meal. It's something that you can serve either warm or cold, and it's really easy to make in a large quantity.

I've never had a complaint with a quinoa, almond, spinach, onion, mushroom, snap pea, and chicken mix, with a small amount of shredded sharp cheddar or gruyere cheese swirled in. Add some spices and a dash of cider vinegar or lemon juice, and it's got tons of flavour. It's one of those dishes that seems to disappear really quickly, though, so if you plan on making it as your meal then make sure you serve yourself first!

I'm always "that guy" who brings a veggie tray and/or fruit tray to a bbq (usually both). Not too exciting, I know. But you know what? Every mom ends up putting some of it on their kid's plate and it almost always goes over well. I make the ranch dip with greek yogurt instead of sour cream (an nobody notices) and will usually also bring hummus. Often the only thing I end up eating is what I brought, because I'm not a big fan of "picnic" foods.

So, I have a church dinner coming up this Sunday. I would like to take something healthy that I can make a meal of, because I'm 99% certain the rest of the foods there won't be things I usually eat. But, I also want to make it something that everyone else will enjoy as well. Any ideas?
