How about a brown rice or quinoa pilaf? You can mix in nuts, veggies, meat, and even cheese to make it a complete meal. It's something that you can serve either warm or cold, and it's really easy to make in a large quantity.
I've never had a complaint with a quinoa, almond, spinach, onion, mushroom, snap pea, and chicken mix, with a small amount of shredded sharp cheddar or gruyere cheese swirled in. Add some spices and a dash of cider vinegar or lemon juice, and it's got tons of flavour. It's one of those dishes that seems to disappear really quickly, though, so if you plan on making it as your meal then make sure you serve yourself first!
