Bake it! Try this recipe. Make it with chicken broth. I guarantee that your family will love it.

Baked Brown Rice

Recipe courtesy Alton Brown, 2005

4 servings

Ingredients

1 1/2 cups brown rice, medium or short grain
2 1/2 cups water or chicken broth
1 tablespoon unsalted butter
1 teaspoon kosher salt
8 oz. can of sliced mushrooms, drained and chopped (optional)

Directions
Preheat the oven to 375 degrees F.

Place the rice into an 8-inch square glass baking dish.

Bring the water (or chicken broth), butter, and salt just to a boil in a kettle or covered saucepan. Once it boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.

After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

Cholesterol = 0mg
Sodium = 319mg
Carbs = 24g
Fiber = 2g
Protein = 2g

I always make mine with chicken stock for extra flavor. We love brown rice, but it did take a little time for my family to get used to it. We love the chewiness now, though. I think you should just keep making it and everyone will eventually convert!

I started by adding 1/4 of the white rice with brown, then later 1/2, 3/4 then I just threw in a small handful (probably 3-4 tablespoons) of white to the brown and finally all brown. This way we gradually became used to the brown. As I was cooking the rice, I always started the brown rice first then added the white just because the brown takes longer to cook.

I love eating brown rice, but just as with multi-grain pasta, I have to watch that I don't make too much at a time, because I can eat a lot of it. I add a 4th cup of turkey gravy to one dry cup of brown rice and then add water when I make it in my rice cooker. I love that simple snack.

Perhaps not the best person to respond, as we love brown rice (and white rice, and that purple 'forbidden rice' and and and ...), but as others have said: (1) mix with other things and (2) soy sauce.

- Do a light 'fried rice' (but cut down on the butter!)
- We do 'rice bowls' with rice and roasted or steamed veggies and a legume (usually lentils) and/or tofu or tempeh
- In stuffed peppers or tomatoes or similar ...

... replacing white rice in recipes with brown rice when the rice isn't the 'star' may be a place to start.

I saute onions in the pan I cook brown rice in and then add the chicken brooth instead of plain water. This adds a lot of flavor. You can also add carrots with the onions when you saute and cook the rice with it. Lots of flavor.

My family doesn't care to eat any kind of rice except white rice. I buy brown rice and end up eating it all myself. Any suggestions as to how I can incorporate healthier brown rice into recipes?
