Sounds a lot like what I like doing for a side. Brown minute rice with a little salsa and 2% sharp cheddar cheese. Cheesy mexican rice. So good, and actually lower sodium than my normal of adding soy sauce to rice. It makes a good side, but certainly not a meal itself. I'll have 6-8 oz meat, a big veggie serving, and glass of milk with that for a fairly typical dinner.

September 2012- Made my goal of competing at feather weight for Bjj (under 149 with a little water cut)
Now I'm just trying to maintain around 152ish to leave me in easy cutting range. Also trying to relax and eat more like a normal person now, balancing enjoying life and staying healthy.
