Get the 6" small corn tortillas for the 'burritos,' and make a tofu scrambler (or regular scrambled eggs) for the filling, with some salsa, maybe cheese, some beans. Sort of like huevos rancheros ... in your hands!

The 'tofu scrambler' recipe comes from Isa Chandra Moskovitz -- one of her cookbooks, I think Vegan With a Vengeance (I'm not vegan, but live with one, and love that book).

La Tortilla Factory makes a whole wheat, low carb tortilla that's yummy!

Here's one of our favorites:
Saute 1/4 onion and 1/4 bell pepper in a nonstick pan (tiny spray of oil if needed)
Stir in 1-2 TBSP cooked black or kidney beans
Stir in 1 whole egg or 2 egg whites - scramble all together until set.
Add a little salsa or hot sauce
Top with a little fat-free or low-fat Mexican blend shredded cheese and guacamole or sliced avocado

Sometimes I'll put in just 1/2 to 1 TBSP chorizo in place of the beans. It's higher in fat, but just a tiny amount gives it lots of flavor.

I cook a whole bag of dry beans at once, you can freeze them in individual portions just fine and it saves a lot of cost of cooking time, then they can just defrost fine.

I like the Trader Joe's whole wheat tortillas.

My go-to breakfast (and often dinner) is...
saute onion and frozen spinach until thawed
add in 1 egg and 1 egg white; scramble and mix into veggies
top tortilla with small amount of cheese, then eggs, then hot sauce or salsa.

Simple, healthy and delicious. Best when served with a piece of fruit or baked sweet potato home fries!!

I just found a new tortilla that I really like in my local HyVee store (not sure if it's anywhere else). It is called "Ole Mexican Foods Extreme Wellness' tortilla wraps. Flavors are Spinach & Herbs, Multi-Grain, Fat Free, Whole Wheeat, & High Fiber Carb. I bought the Tomato Basil variety (good).

Nutrition info for one Tomato Basil wrap (45 g) = 68 calories, 2 g fat, 205g sodium, 17g carbs, 12g fiber, 8g protein.

I am enjoying the 'stats' of this wrap and it's tasty. I hope you can find it in your area and like it too.

A brand called Mission makes large tortilla's that are whole wheat at 130 each.

See if your local market has some !

You can make a batch every Sunday and have enough for the week !
Stuff with eggs, turkey bacon, low fat cheese, veggies, what ever you like !!

I'm in a breakfast rut, tired of cold cereal, almost tired of oatmeal. I usually eat my breakfast at work(I'm up at 4:50 am, out the door at 5:45am). I work at a hospital and trying to avoid the caferteria - to save a little money, plus the food isn't the healthiest. So, I'm going to make up some breakfast burritos, freeze them and take 'em to work for my breakfast. BTW, I'm dieting so, something lower in calories, like adding veggies, etc... What are the best shells to buy?
