I love my crockpot and use it 1 or 2 times a week at minimum!
Chili is excellent in the crock pot - 1 pound of extra lean ground beef or turkey (browned), onion, bell pepper, garlic, 2 cans kidney or black beans, 2 cans diced tomatoes, salt, pepper, 2 TBSP chili powder or to taste
Fiesta chicken is really good too - 1 pound of chicken breast, 1 can corn, 1 can black beans, 1/2 to 1 cup of salsa. After crockin' all day, shred or chop the chicken and serve over brown rice.
Shredded BBQ pork - pork tenderloin and a bottle of BBQ sauce. Shred and serve on whole wheat buns or over brown rice
Taco soup - browned lean ground beef or turkey OR chicken, 1 packet low sodium taco seasoning, 2-3 cans low sodium beef or chicken broth, onion, bell pepper. Serve with a few baked tortilla chips on top
