I realize many of the Food Network celebrity chefs tend to cook recipes that could hardly be called healthy. However, there are many that DO promote healthy cooking, and even of those who do not, you can usually tweak their recipes a bit to make them healthier.
My current faves are Ina Garten and Giada De Laurentiis. I also love the Five Ingredient Fix show because it seems to have some healthy options.
Who are your favourite chefs? And do you have any recipes to share?
The recipe below was taken from the only Paula Deen show that featured healthy cooking. I think it was back in 2005, or so, but I cooked this recipe and LOVED IT (if I recall, I substituted a different kind of fish and omitted the butter):
Can't Miss Red Snapper
Recipe courtesy Paula Deen
Prep Time:10 min
Cook Time:15 min
Serves: 4 servings
4 (8-ounce) red snapper fillets, about 1/2-inch thick
1 teaspoon salt
1/2 teaspoon pepper
1 cup chopped onions
1 green bell pepper, chopped
1/2 cup (1 stick) butter
1 tablespoon Worcestershire sauce
1 cup freshly grated Parmesan
Preheat oven to 350 degrees F.
Season the fish with the salt and pepper. Spread the onions and pepper in a 13 by 9-inch glass baking dish and place the fish on top. Dot the fish with butter. Sprinkle with a little Worcestershire sauce. Bake for 12 minutes, then baste fish with pan juices. Sprinkle the fish with Parmesan and then place under the broiler for about 2 minutes or until the cheese browns. To serve, spoon the vegetables over the fish.
