So maybe this is old news but I'm pretty excited by this LOL A friend of mine gave me a bunch of herbed goat cheese after a party, so I thought I'd make a pasta dish with it and some leftover asparagus and chicken. I love goat cheese but it's usually out of my price range for my budget.
Did some googling and found out you can crumble up goat cheese with a bit of olive oil, and some pasta water, and it makes a really delicious cream sauce. This is the recipe I made, with chicken added to it:

goat-cheese-and-lemon-pasta/ The entire meal with 2oz of fettuccine, 3.5 oz of chicken, a half cup of chopped up asparagus, and the sauce (made with 2oz of goat cheese and 1.33 tbsp of olive oil, split in half to make 2 servings), was 515 calories. Way better than most pastas with cream sauce!
