I've done something similar with zucchini. Used "regular" lasagna ingredients (meat, sauce, ricotta, mozzarella) with zucchini instead of noodles for my low carb hubs. Yum. I never get eggplant quite right when we've tried it. Maybe I'll have to give this a shot. No beans, though.

Sounds delicious! My family loves eggplant. Gluten is found only in wheat, barley and rye grains. So if you choose a pasta noodle next time rice noodles works great also.

Hi there- Thought I would share that I made lasagna with fresh eggplant instead of noodles and it was FANTASTIC!!!

We simply cut the eggplant into strips and then topped like you would with sauce, olives, mushrooms, cheeses, kale and Cannillini (spelling) beans and herbs - about the same baking time.

Also tip with the fresh mushrooms to slice then bake naked on a cookie sheet in oven before sauteing in butter. If you like mushrooms and butter theses will flip your lid :)
