saute with lots of mushrooms and green onions, a little bit of low fat milk.. makes a reasonable substitute for a richer strogonoff... a little goes a long way.. .. I serve with brown rice or whole grain pastas or over steamed zucchini or summer squash. Sometimes I add fresh spinach to the saute.

An italian, natural meat sauce, just brown it with onions and garlic, then add tomato paste and blend, finally add zucchini, eggplant, celery, peppers and chicken broth, add italian spices (oregano, basil, etc) and let it simmer. Serve with whole wheat pasta, it's superb!!! Tastes like a sin and nobody even notices the amount of vegetables in the sauce. Pair with a glass of red wine for extra antioxidants.

Chili with lots of veggies! Brown the beef with onion and drain extra fat. I add in zucchini, bell pepper, and sweet potato and cook about 5-7 minutes. Then add 1 tbsp chili powder, 1-2 tsp cumin and 1/8-1/2 tsp cayenne and cook for a minute. Stir in 16oz jar of salsa verde and about 1/2 cup of water (adjust to your desired thickness), bring to a boil, reduce heat and simmer for 20 minutes. Then add a can of your favorite beans (rinsed) and heat through. You can change up the vegetables to what you like. Corn and green chilis are good too, anything that sounds good to you.

I recently made baked meatballs with them, which was fab and easy to eat as they were already portion sized. You can also make a pretty low calorie taco soup either on the stove or in the crock pot. Cook your hamburger and drain and then add taco seasonings, a can of corn, a can of black beans, a can of green chiles, some water or chicken stock, a can of chopped tomatoes. Really good with a dollop of sour cream or chips!
Lose the weight sensibly, steadily and without deprivation. Being fat is hard. I want a new hard.

Thanks for the great ideas! I get stuck in a rut and have a hard time coming up with ideas of what to use ground beef for also!

The lowfat cheeseburger pie recipe on sparkrecipes is really yummy! My nieces scarfed it up! I used turkey burger but I'm sure ground beef would be just as delicious!

Chili, taco meat, sloppy joes. If you want to go all fancy, you could make French Onion Salisbury Steak. This tastes amazing and seems like fine dining for mid-week (and even on the weekends in my house! Meat loaf....easy recipe that is yummers 1 lb ground , 1/4 C chopped onions, 1 can evaporated milk, 3 slices of bread soak the bread in the milk, stir until its mushy,add onions to beef and mixl, add bread/milk mixture and mix well. Put in a loaf pan and bake at 350 for 45 min.to an hour. Top with ketchup about after 30 minutes of baking. This is a recipe from the 1930`s and is unbelievablely delicious cause it is so very easy!.

I have some organic ground beef I picked up from the Farmer's Market - I was so excited about the deal that I didn't realize I don't know what to do with ground beef besides Hamburger Helper (ugh) or handmade burgers. Any ideas?
