Throw a couple frozen chicken breasts into the crock pot, top with a can of diced tomatoes with green chiles, a can of drained and rinsed pinto or black beans, a cup of frozen corn, and a can of chicken broth (low sodium, low fat). sprinkle with cumin, parsley, pepper and a tiny bit of salt. Stir
Cook on low 10-12 hours. When done, shred chicken with forks and serve over white rice.
