I thought I would share this salad idea. I got this for lunch at the Fred Meyer deli yesterday and was so happy to find something so tasty and healthy at a deli. If you Google Superfood Salad, you'll get lots of recipes and ideas. The one I had was basically:

Curly kale cut into 1/4" ribbons as the base
A little bit of shredded cabbage and grated carrot
Sunflower seeds
Fresh blueberries
Red onion
Edamame
Cashews
Cherry tomatoes

It also had Craisins, but I picked those out because they're loaded with added sugar. I might throw in some of my homemade raisins instead.

There didn't even seem to be any dressing on this, but I do know from making kale salad that it's best to either very lightly microwave the kale (like 20 seconds), massage it with a little bit of lemon juice, or put it in a container overnight with a bit of lemon juice or other liquid. Any of these methods gives it a chance to wilt slightly so it's not as tough. I'm thinking some lemon juice and maybe even some avocado would be a nice addition. It would be great with more beans for a main dish for lunch, or eaten with some tuna salad.

Just wanted to share because I liked this stuff so much!
